Plant Based Baby’s Cashew and Lentil Bake Recipe

This recipe is suitable for stage two weaning.

 

Ingredients:

1 cup raw cashew nuts

1 small onion

Half a tin of green lentils (low sodium)

2 slices bread

1 Tbsp mixed seeds

2 tbsp olive oil

 

Method:

Sauté the onion in a little olive oil and when it’s soft, add this and the other ingredients into a food processor. Blend the mixture until it resembles fine breadcrumbs. Place in an oiled over proof dish and bake at 180 for about 25 minutes. When serving for Stage Two, mash it into a small bowl and spoon feed. For Baby-Led Weaning, cut small chunks for your baby to feed themselves.
